I don't really like them, but at a help-your-own-plate buffet they always look delicious, so I take some and I eat them. I've never eaten parsnips, never known anyone who grew/cooked them. If they're as tasty as rutabaga and carrots, then I eat those also. Kale is just one in a long line of delicious greens. I eat Brussels Sprouts.
