A Vibrant Vegetable Feast for the Eyes

This is what vegetable growing is all about, the harvests. This June harvest is especially vivid due to the dark purple pods from the Mange Tout ‘Ezeta’s Krombek Blauwschokker‘, extra large green pods of ‘Carouby de Maussane‘ Mange Tout and my favorite Radish ‘Pink Beauty‘ from last season.

The shiny round peas sitting snug in their pods are from a dwarf variety called ‘Twinkle’, which rounds up the colourful harvest that will be a feast on my plate this evening.

1. Roasting

It works quite well, only roast for 10 – 15 mins with a splash of olive oil. I added some pods to my dish of beef cannelloni and it added some crunch and colour to the dish. It is worth mentioning the purple colour does run onto the area around it, so my cannelloni had a mottled purple effect.

2. Stir-frying

Personally this is always how I would cook mange tout, as its quick and easy to add some pods into the end of a chicken/vegetable stir fry. They only need frying for 5 – 10 minutes to soften the pods, any longer and they may go soggy and loose their characteristic crunch. The purple colour doesn’t run into other vegetables when stir fried and the colour definitely gives a certain pizzaz to your dish.
