Bank holiday is a good time to get out and about and check on my back garden veggies. So far I’m sticking to my winter watering tip of “no watering in winter, let the weather do it for you” as I haven’t watered my winter seedlings since they were sowed at the end of October.

Broad Bean Plot

Look at them now, admittedly they are trailing a bit along the ground however I find Broad Bean plants quite robust and with the exception of blackened tips of their leaves when frost has struck (I’ve got a few of those), they tend to get through the worst of the winter including last years snow. Thats another reason why I like growing winter vegetables so much as they are strong and happily grow away until springtime.

My peas (douce provence) are small probably because they were interplanted between the rows of broad beans but do not show any signs of frost damage which I was aiming for, and this variety of pea is very reliable for winter growing.

Unexpectedly also growing in my Winter plot is the late re-emergence of Kale Fizz, it’s positively blooming in this mild weather and I’ve also got lots of rocket as well.

Kale 'Frost Hardy' Fizz

Unfortunately if you do take you eye off the vegetable plot, especially to new vegetable seedlings you haven’t sown before, then unexplained disappearances can occur. There are a number of reasons for this, including cold temperatures, pests in the soil, seedlings rotting and disappearing.

My winter seedling disappearances include:

Winter Cauliflower,

Turnip,

Spicy Leaves

Unfortunately it’s just the way nature deals the cards and as I’m not one to give up on things easily, better luck next time!

I’ve been on a mission to grow vegetables for the past four years now however I’ve let the kitchen side down as I’ve not explored cooking with my vegetables as often as I’d liked. When I have cooked with my harvests, it hasn’t been very adventurous, usually I’ll just boil the green beans from the freezer and not create or add them to a recipe.

I’ve decided over the past few weeks, that I could do with saving some money over Christmas and into the new year and I can save money as I have potatoes, carrots, shallots, green beans etc in storage but I’m not using them to their best and most importantly tastiest advantage.

My cooking ability is ok, I am good at baking cakes, biscuits etc but I don’t tend to cook main meals very often and when I do its something like Shepherds pie which is in my cooking comfort zone. In these batch recipe trials, I aim to go out of my comfort zone and hopefully cook up some tasty and freezable recipes on the cheap.

My first recipe is from BBC Good Food website or on Twitter @bbcgoodfood:

Mushroom, Shallot and Squash Pie

Recipe Link: http://www.bbcgoodfood.com/recipes/853636/mushroom-shallot-and-squash-pie

Homemade Veg Pie

I chose this recipe because:

It sounded like a hearty pie,

It would use up some of my stored shallots,

I had a 3 week old butternut squash in the cupboard and needed to use it,

It didn’t look too difficult to make (everyone can make a pie right?),

Its freezable for up to 2 months

I made this recipe without the dried porcini mushrooms and to save money on the puff pastry, I made my own shortcrust pastry from the very easy recipe Hugh Fearnley-Whittingstall used to make his Spinach and Thyme Pasties from in Rover Cottage Veg.
Pastry Recipe here: Spinach and Thyme Pasties.

Review on Preparation:
The is no hiding the fact that there’s a lot of chopping vegetables in this recipe. Notably so were the very strong shallots which left me almost blind with tears!

Harvested Shallots

Review on Cooking:
I made the pastry first as it needs 30 minutes in the fridge before rolling out. I chopped the vegetables and used a number of saucepans to fry the squash in one and shallots in the other, then the mushrooms in another before combining it all together. The flour and vegetable stock sauce was a challenge as there was quite a few lumps of flour but I kept stirring quickly and most cleared away, the rest went during cooking.

Quantity of Vegetables to Pastry:
The pastry more than covered the large dish and one individual dish. I wrapped up the remaining pastry and left in the fridge for a Spinach pasty or two. There was enough of the vegetable mix to fill the large dish and individual dish, this will be four to five portions.

If I made this recipe again, I would:
Make the portions in individual takeaway cartons or cookable and freezable containers, so they could be taken from the freezer in individual portions rather than the large dish I made it in this time.

Verdict:
The lovely roasted shallot smell and the softness of the squash and creamy sauce made this pie a delicious vegetarian meal to suit a large family or batch individual meals. There is a subtle mushroom flavour but as the mushrooms were sliced, these pieces were almost lost in the sauce. Next time I might add quarters of mushrooms instead of slicing them. Overall a recommended winter warmer.

If you have any recipes you’d like me to try or you can recommend, please leave a comment.

The last vegetable seeds have been sown for this year and the only bulbs left to plant are the garlic bulbs between end of October and Mid November. I’ve decided to try sowing my onions and shallots from seed in March next year so I’m not planting any sets this autumn. If you are planting Onions and Shallots Sets, they can be planted until the end of November.

I sow all my overwintering vegetables under my home-made Geoff Hamilton Cloches covered with Enviromesh and if it gets really cold (and I remember) I throw some horticultural fleece over the cloches over night to protect from frost and snow.

Here’s what seeds I’ve sown for a Winter to Spring harvest:

Broad Bean – Supersimonia

Aquadulce Claudia Seeds

I’ve sown most of the Autumn Sowing Broad Bean varieties and think Aquadulce Claudia is the best overwinter performer but I’ve not come across this one before called ‘Supersimonia’. Its description is vigorous and hardy with great crops, so I’m looking forward to seeing if these plants live through the frost and snow.

This year I’ve sown my broad beans and peas in a alternate row pattern i.e. one row of beans, one row of peas, one row of beans etc so that the frost doesn’t ruin all the plants and they can protect one another.

This variety is an old faithful to me, its very reliable, performs very well overwinter, you get lots of pea pods with sweet peas and not so much powdery mildew in Spring.

As long as the plants are kept from falling all over onto the soil surface (prop up with canes) in winter, the plants survive the cold and wet and also its a bonus that they don’t grow very tall, so no need to get the tall canes out for these lovelies.

This is a dwarf winter cauliflower which I haven’t sown before. I’ve spaced out the seeds already so there should be no need to thin the seedlings when the soil is frozen.

October has been a really great month for harvests especially french beans, runner beans and more beans before the frost took them.

Here’s what my vegetable plots were looking like a week ago:

Unfortunately there is a slug and caterpillar problem in Plot 1 and they have teamed up together to eat the rest of the Pak Choi, spicy leaves and lettuce from my Seed Pantry Autumn kit. Here’s the slug I caught red handed and the damage he and his friends caused to the Pak Choi, there’s no coming back from that sort of chewed mess, so I pulled it all out.

Slug eating spicy leaves

One saving grace was the fact that I had enough sense to plant the chard seeds in a different plot. They are doing well and have been thinned, I’m looking forward to how these fair the winter months as I haven’t grown chard at this time of the year before.

So that just leaves the Harvests for October, here they are in all their glory:

After growing several Kohl Rabi plants this year I absolutely love its crunchy taste and will definitely be growing these again next year.

Back in June I sowed a variety of Kale called ‘Fizz’. I saw it in the MoreVeg online catalog advertised as a new british bred kale and the leaves looked quite unusual. The seed price was only 50p so I thought I can’t go wrong for this price, I’ll give it a try.

Kale is very useful to have in your vegetable garden for the hungry gap, I read this quite a lot from other bloggers like RealMenSow and they rave about how great it is to harvest overwinter.

Harvest of PSB and Kale

I long to have this love of Kale as my relationship with Kale is a bit on/off so far. Over the past few years, I’ve grown Redbor and Cavolo de Nero. Redbor got infested with whitefly and Nero only grew a few small leaves before dying (although they were very tasty). With this not very successful past, as you can imagine I wasn’t really expecting a lot from Kale – Fizz but I hoped it might survive to harvest period at least.

In June I hadn’t heard of Kale Fizz before but now since all the new seed catalogues have arrived, it seems to be available everywhere, which is good because its the only Kale (so far) I’ve ever grown successfully. I sowed it next to the rocket and its really taken off well, the rocket leaves tend to prop up the kale leaves quite well.

I’d thought I’d never see the day, when I was raving about Kale, so here’s goes nothing.

Why You should Grow Kale Fizz

Harvested Kale Fizz

It’s blue, grey, silvery leaves are very unusual and it stands out in the vegetable plot,

It is very quick growing,

Baby leaves can be added to stir-fries without the need of chopping them up and they only need a few minutes,

It can be kept in the ground, overwinter for the hungry gap,

It is good to grow successionally and doesn’t take up hardly any room in your plot,

It doesn’t seem to get infected with whitefly,

It looks good grown in a mass of leaves or inter-planted with rocket, chard, spinach etc.

If I can grow it, anyone can! Why not give it a try next year? Sow April to July.

Rocket Recipes to Try:

Rocket and Caramelised Onions with Goats Cheese
A lovely nutty, salty, tangy combination of ingredients and I’m going to use my shallots in place of the onions.

Cherry Tomato, Wild Strawberry and Rocket Salad
I know rocket and tomato are a classic combination, but I’m not so sure about the strawberry addition. I’ll give it ago as I’m intrigued to see what it will taste like.

Rocket Soup
Autumn is the season of soup making and I have shallots (from harvest earlier this year) and potatoes. Looks like this recipe is going to be made sooner rather than later.

Rocket Soup

Roast Beef and Rocket Salad
Finally a recipe for those lazy sunday’s and it uses up your leftover roast beef meat. All topped off with crispy croutons and an avocado mayonnaise. Am I making your mouth water yet?

Chorizo, Red Pepper and Rocket Rolls
Chorizo, a continental smokey flavoured meat of the moment which I tend to use in the kitchen quite a lot, combined with red pepper, rocket and goats cheese filling to the rolls, this recipe is more of a starter or light snack.

Watercress, Spinach and Rocket Pesto
A spin on the usual basil pesto using a few favorite green leaves including watercress to the original pine nut and olive oil recipe, this is easy to make and store in jars in the fridge. Use for pasta dishes or as a salad dressing.

Asparagus and Lemon Spaghetti with Pine Nuts and Rocket
An easy to make pasta dish with a hint of lemon and can be spiced up with the addition of chilli flakes.

Rocket Pasta

Braised Peas, Rocket and Spring Onions
A simple but tasty classic combination of onion, peas with a peppery burst. It can be used as a side dish or base for roast chicken or other cooked meats.

Pappardelle with roasted pumpkin, sage and rocket
A seasonal dish with pumpkin or butternut squash which is almost harvesting time with the addition of warm pasta is the perfect meal for those cold autumn nights.

There has been good results and bad results with my Red Rubi Pak Choi. Good results in that it is a stunning vegetable to grow, very quick grower, has a nice crunch to it in stir-fries and doesn’t loose all its colour on cooking (by cooking I mean 2-3 minutes in a frying pan).

Red Pak Choi Leaves

I harvested the first batch of red pak choi last week however the remaining plants didn’t see the caterpillars coming, this pest has decimated the rest of my crop and ruined all the leaves.

By contrast, I sowed Rocket Esmee (from MoreVeg) in the other raised bed and I’m pleased to say there’s no caterpillers and you can definately tell by the sea of green lobed leaves of rocket and Kale – Fizz (from More Veg).

Home-Grown Rocket Vs Shop-Bought Rocket

In the past I would just buy a bag of salad from the supermarket with rocket included to add some bite, but shop bought rocket is mild compared to the strong peppery bite that comes from homegrown rocket. The home grown rocket, just keeps on growing as you cut it, I’ve been cutting a few leaves for the past 4 weeks and counting.

Rocket Esmee lobed leaves

Growing rocket is a brilliant way of having your own salad at home and an even better bonus is it lasts in the fridge about a week in a sealed container unlike the soggy rocket you usually find in the bag from the supermarket after a couple of days of opening it.

Also good news, Rocket can be grown in October to see your salad continue and harvesting will be in 3 – 4 weeks if growing the Esmee variety, it is a very quick grower.

Chantenay Carrots and Juliennes

I’m also harvesting Chantenay Carrots, they are short pointed baby carrots packed with flavour and are easy to grow especially in a container.

I like these carrots because they are so easy to cut into julienne’s (thin carrot slices) to add to salads, sandwiches or stir fries. I followed this video which shows you how to do it without cutting your fingers! it’s easy when you know how and only takes a few goes at getting it right.

Following on from my last post ‘Growing KohlRabi – Monster of all Vegetables‘ and the comment from Mark at The Smallholders Diary for recipe ideas for Kohl Rabi, here is my very first cooking and tasting session.

I labelled Kohl Rabi as a monster vegetable in my last post and if you’ve not come across this vegetable before it is a cross between a cabbage and turnip. In the vegetable garden it does look a bit monsterous with its leaf tenticles and bulbous bulb. Now after 2 months growth, the proof is in the eating as they say.

Harvesting Kohl Rabi

To harvest the kohl rabi plant, just pull it out of the ground, roots and all, by gripping the bulb for leverage. To cut the roots off, use a kitchen knife and make a cut at the base of the bulb as this is easier than trying to cut off the root stem which is very stringy and tough.

Preparing the Kohl Rabi

Kohl Rabi in the Veg Garden

Firstly remove the leaf stems at the bulb with a knife and put the leaves aside for cooking like spinach as the whole of the kohl rabi plant can be eaten.

Kohl rabi is easy to prepare for cooking which suprised me as the outer bulb skin looks thick and feels like rubber however the (old) potato peeler had no trouble removing the outer layer. Then top and tail the bulb with a knife, this glides into the soft bulb with no effort.

The kohl rabi flat bottom globe can now be sliced, diced or cut into batons to cook. The middle can also be scouped out and stuffed with your choice of veggie or meat filling.

I opted for cutting into batons and sauting in a knob of butter, splash of olive oil and chopped up shallots also from the veg garden, harvested in July this year.

Fry for about three minutes, then add any other vegetables, I’ve added some chopped runner beans also from the veg garden. Then add a small amount of vegetable stock to the frying pan. This helps the kohl rabi and runner beans to absorb the liquid and soften quickly but still retaining their crunch.

After about 4-6 minutes, the water will have evaporated and you can brown off the vegtables if you wish. Put the kohl rabi leaves in the frying pan and use the heat from the pan to cook it through like spinach. After a minute or so, turn out onto a plate with fish or meat to serve.

What does Kohl Rabi taste like?

I thought it tasted like crunchy cabbage which is was very nice. Even my other half, who’s whole vegetable diet only consists of carrots, cabbage and green beans absolutely loved kohl rabi raw. It can be eaten raw or grated into salads.

Will I grow it again?

Yes definately, my whole experience with Kohl rabi has been a good one and also a bonus I love the taste. I found myself wondering why supermarkets didn’t sell them, but I’m quite glad they don’t as I can grow them myself knowing where they have come from and also its part of the glory of growing vegetables when you can grow a vegetable or variety that isn’t shipped hundred of miles accross oceans just to be in our supermarkets.

iGrowVeg’s August Harvest

Performance: A bit slow growing this year (possible cause the weather i.e. not enough rain in spring).
Would I Grow again? Yes for their lovely flavour.

French Beans

Baby Carrots and French Beans

Performance: Excellent, grow quickly, great taste when steamed.
Would I Grow again? Yes, they grew really well.

Shallots drying in the sun

Variety: Golden Gourmet from SimplySeeds.co.uk
Would I Grow again? Yes, easy to grow and flavoursome bulbs.

Potatoes

Marfona Potatoes

Variety: Marfona (Jacket and Roast Maincrop variety) from SimplySeeds.co.uk
Performance: So far so good, I have harvested a few roast sized potatoes, so I’m hoping for larger sized potatoes in September. Taste and cook really well as wedges.
Would I Grow again? Yes, although some of the potatoes already have a small dose of scab, once the potato is peeled or scrubbed well, this is gone.
